We made it! We have worked through our Twelve Days of Christmas and concluding today. This is also the last blog post I will have with you before Christmas. True to the website name, family comes second only to my faith, so I will be taking some time to celebrate with the people that mean the most to me. I wish you a very Merry Christmas, full of joy and countless blessings, and time with the ones you love too. Thank you for allowing me to share some of my favorite traditions and recipes of the holidays with you this past month. Food For Thought I am no more convinced of the meaning of this song than I was 11 days ago! All I have really uncovered have been theories and guesses and contradictions. How about you? Do you have a guess or do you lean a certain way on what you think the song really means? The one thing I do know is that I still consider it to be a strange and intriguing carol for Christmas. There may be other symbolism or reasoning why a partridge was picked and why it’s in a pear tree and not some other type of tree. As one reference I read pointed out, partridges are ground nesting and foraging birds, so it’s unusual that it is in a tree at all. But I didn’t explore any further than the following religious symbolism for the first day of Christmas.
If we are to go with the theory that each gift in the song is actually referring to a key component of Christianity, then the first day is of utmost importance! The idea is that the partridge in a pear tree is referring to God’s gift to us, his son, Jesus Christ, the ONE. As we are approaching Christmas day, a day we have set aside to recognize the humble birth of our savior, I find it meaningful to contemplate on this gift, regardless of the song. It is good to set aside some time to contemplate the many facets of Jesus’ birth. The idea that God knew His creation would need a savior thousands of years before He brought His son to earth. The prophesy of the child’s birth in Isaiah 9. The angel that first appeared to Mary in Luke 1. The faithful actions of Joseph. A chain of events that brought Mary to a stable and not an inn, to give birth to this Son of God, wrapped in cloth and placed in a manger (Luke 2:7). I even think of the details omitted from scripture…the loving first touch between mother and baby, the tasks that go with carrying for a baby-the changings and the feedings, the crying and unknowing, the worry that mothers have for their children, the life upheaval all new parents experience, so much to take in. But that humble birth that happened so long ago and celebrated this season took place because of ME. And YOU. And ALL of mankind. God gave us the gift of grace through His son and his death, which would never have happened if it had not first been for his BIRTH. Merry Christmas, everyone!
Today’s Recipe I have shared so many cake, cookie, and candy recipes for the holidays, and they are quite yummy! But I also realize that not everyone can, or should, eat all of these high-sugar desserts. My husband is one of those people. My husband is diabetic, but that doesn’t mean he can’t enjoy some holiday treats too. I am always looking for options to reduce sugar or carbs but still offer something sweet. My husband is a big fan of pies and cobblers, but I don’t make them a lot. My pies and cobblers always turn out very yummy, but they are not my most prettiest desserts. And I’m not going to get in a pie crust debate today. For now, I’ll leave that decision up to you. Today’s recipe combines lots of sweet and tart fruits in a simple pie, sweetened with Splenda.
Low Sugar Apple, Pear, & Cranberry Pie
- Crust for a 2-crust pie (homemade or refrigerated, like Pillsbury)
- 4 small pears
- 3 small tart apples
- 1 cup dried cranberries
- 3/4 cup Splenda or sucralose sweetener
- 1 TBS Baking Spice, Apple Pie Spice, or a blend of cinnamon, nutmeg, and allspice
- 1 tsp vanilla
- 2 TBS butter, diced
- 1 TBS flour
Preheat oven to 375 degrees. Place one crust in glass pie pan and place pan on baking sheet (this keeps your oven clean in case of boil-over!) Core, peel, and slice pears and apples. Place fruit slices in large mixing bowl. Add cranberries, sweetener, spices, vanilla, butter, and flour and mix thoroughly. Let mixture stand for 10 minutes to bring out the juices. Dump fruit mixture into pie crust. Top with second crust and crimp edges. Use a sharp knife to make 5 or 6 slits in the top of the crust. Bake for 20 minutes at 375. Reduce heat to 350 degrees and continue to bake 40-45 minutes. You may want to cover the edges of the pie crust with foil for about half the time so they don’t burn. Allow to cool at least 30 minutes before serving.
