Setting Our Sights on Summer and Cherry Limeade Cake

Welcome  Today is the official start of spring!  Can I get an Amen???  I don’t think I know a single person that is sad to see this winter go.  My family and I are more than ready for warmer temperatures and definitely more sunshine.

I do love spring with all the blossoming flowers, budding trees, and longer days to play outside.  But my favorite season is summer.  As we begin to set our sights on summer and all the fun family memories it brings, I have a recipe to share from one of my favorite summer memories.

Today’s Recipe  I spent a lot of time with my grandparents during summer breaks when I was growing up.  Those were the days of simple entertainment, like driving the back roads and watching the rivers.  I can remember sitting in between my Grandma and Papa in his pick-up truck driving all over the place, just seeing the sights.  I loved this activity and to be honest, I still love going for drives and seeing the sights, even if very simple. (I make a great cheap date for Hubby!)

One of the best parts of these drives, however, was the Sonic Drive-In stop.  I thought it was so cool how you could order in a box and then a girl on roller skates would come out later and bring your food on a tray that hooked to the side of your window.  A Sonic cheeseburger, onion rings, and a Cherry Limeade was my go-to order.  This would probably not be typical of today’s five and six year-olds, but I thought it was such a special meal, not necessarily because of the food, but the activity surrounding it.

As an adult, we literally have a sonic a half-mile from our house.  We rarely ever eat there.  It’s just not our family’s preference, but then again, it’s not the food, but the experience. I still like cherry limeades, though.  So, I began to wonder if I could take those familiar flavors and turn it into a dessert.  So today, I bring you my version of a Cherry Limeade Cake.

I “invented” this cake by starting with a vanilla cake mix, frozen limeade concentrate, and a jar of maraschino cherries and went from there.  It’s sweet and tangy, with just enough lime and cherry to taste familiar.  By adding the pudding and liquids to the boxed cake mix, this is a super moist cake.  Garnish with thin lime slices and cherries on the stem, and you have a festive cake for your spring or summer dessert tables.

Cherry Limeade Cake


For Cake

  • Nonstick cooking spray and flour for preparing the Bundt pan
  • 1 16.5 oz. vanilla-flavor cake mix
  • 1 3.4 oz. vanilla-flavor instant pudding mix
  • 1/4 cup granulated sugar
  • 2/3 cup water
  • 1/2 cup vegetable oil
  • 3/4 cup frozen limeade concentrate, thawed
  • 4 eggs
  • 3 TBS maraschino cherry juice (from jar)

For Glaze

  • 1 1/2 cups powdered sugar
  • 1 TBS frozen limeade concentrate, thawed
  • 2 TBS maraschino cherry juice (from jar)
  • 1 TBS milk

For Garnish

  • 10 maraschino cherries, with stems (from jar)
  • 10 thin half-slices of lime

Cherry Limeade Bundt Cake, starts with a doctored vanilla cake mix using limeade concentrate and maraschino cherries


  • Set oven to 350 degrees. Spray a Bundt pan with nonstick cooking spray and dust with flour. Tap out excess flour.
  • In large mixing bowl, beat cake mix, pudding mix, sugar, water, oil, limeade, eggs, and cherry juice to combine.
  • Pour cake batter into prepared Bundt pan. Tap gently to distribute evenly.
  • Bake at 350 degrees for 50 to 60 minutes. Cake is done when top springs back lightly to the touch.
  • Remove cake to wire cooling rack for 20 minutes.
  • Run a blunt knife around the inside and outside of the cake pan. Invert round cake plate over top of cake pan and flip over, turning cake out onto plate. (If you used enough spray and flour, the cake should come out perfectly.)
  • Prepare glaze by whisking together powdered sugar, limeade concentrate, cherry juice, and milk.
  • Using a tablespoon, drizzle glaze back and forth over the top of the cake, allowing it to run down the sides.
  • Garnish top of cake with half lime slices, curled slightly, and cherries with stems.

Today’s Scripture

Trust is my word of the year. So many great verses I’ve been sharing on this journey. Another verse I keep going back to is this passage in Ecclesiastes. Not only does Ecclesiastes 8:6 encourage me to trust God with everything, but to be patient with His timing, as well. I don’t think it was coincidence that I was brought back to this verse again this morning.
